We don’t like to waste food, so when it comes to cleaning out the fridge, one of our favorite things to do is to make a big old salad loaded with all the goods. It’s an easy lunch or dinner, it’s packed with nutrients, and it is A LOT cheaper than getting take-out.

Clean Out The Fridge Chicken Salad

A easy, versatile, healthy, and budget-friendly lunch or dinner to enjoy any day of the week!


Ingredients

Scale
  • 1 leftover boneless skinless chicken breast (cooked in the air-fryer at 380 degrees for 25 minutes…the chicken breast was seasoned with KABOOM & Nothin’ But Ranch
  • 1 corn on the cob
  • diced red onion
  • handful of cherry tomatoes
  • 1/2 avocado
  • handful of spinach and romaine lettuce
  • 1 bagel

Instructions

  1. Dice up the chicken;
  2. Chop up the vegetables;
  3. Toast up the bagel;
  4. Throw it all together and mix it up!
