Grilled Fish Tacos With A Creamy Chipotle Sauce

Delicious, healthy, and a great recipe for grilling season, because who can say NO to tacos!


Ingredients

Scale
  • cole slaw tri-color mix
  • sliced green onion
  • cilantro
  • crushed garlic
  • 2 chiptoles in adobo sauce
  • 2 T of mayo
  • 2 T of sour cream
  • 1 T of lemon juice
  • touch of honey
  • cod fish
  • Taco Knight
  • Mission Foods tortillas

Instructions

Cole Slaw:

  1. Mix the cole slaw mix, plus the sliced green onions, cilantro, and crushed garlic;
  2. Mix the dressing together, which starts with 2 chipotles in adobo sauce, blended with the mayo, until smooth;
  3. Then fold in the sour cream and lemon juice. When mixing add a touch of honey to cut the heat from the chipotles.

Fish:

  1. Cut the cod into strips and pat dry;
  2. Season with Taco Knight, plus a touch of salt;
  3. Spray the grates with canola oil to prevent sticking;
  4. Cook the fish until flaky and then char up the corn tortillas;
  5. Plate everything with all the toppings!
