Not sure what to do with those zucchinis that are sitting on your kitchen counter? We produced so many this summer in our backyard and have been using them in savory dishes, but I wanted to switch it up and make something healthy. This recipe was EXACTLY what I envisioned! They took less than ten minutes to put together and you’ll have a delicious sweet healthy treat in no time!

Super fudgy, healthy, and easy chocolate zucchini brownies! YUM YUM YUM!
Ingredients

- 1 1/2 Cups Zucchini shredded and strained
- 1/2 Cup Peanut Butter powder
- 2–3 TBSP Water
- 1/2 tsp Vanilla bean paste or extract
- 2 T pure maple syrup
- 1/2 C Cane sugar
- 1/2 C Unsweetened cocoa powder
- 1/2 C Almond flour
- 1/2 tsp baking powder
- 1/2 tsp Baking soda
- 1 tsp Salt

Instructions
- Preheat the oven to 350 degrees;
- Take the zucchini and shred with a small grater. If you would want a more blended brownie place in a food processor to get super fine;
- Place the zucchini in a clean towel and squeeze all of the water out of the zucchini;
- Place the zucchini in a bowl;
- In a small bowl add the peanut butter powder and slowly add water until it has the consistency of peanut butter;
- Add the peanut butter, vanilla, date syrup, sugar, cocoa powder, almond flour, baking soda, baking powder, salt and OUR Chocolate Crave;
- Mix until combine;
- Pour the batter into a greased pan (I used a 9×9 pan lined with parchment paper);
- Bake for 30 minutes;
- Let cool on the counter for about 20-30 minutes before cutting!
