Who doesn’t love a big old plate of nachos? Let’s face it, when you order nachos at a restaurant they can be loaded with calories and fat and can leave you feeling pretty sluggish and full. But, homemade nachos are a whole different story. Cauliflower Nachos are a great way to make them healthy without sacrificing the flavor, plus they are versatile, so you can really use whatever veggies or protein you have in the kitchen. Have fun with them, get creative, and eat up!

Cauliflower Nachos

Healthier nachos…YES and PLEASE!


Ingredients

Scale
  • 1 small Head of cauliflower
  • Avocado oil spray
  • Black pepper to taste
  • OUR Street Taco to taste
  • OUR Taco Knight to taste

TOPPINGS:

  • 1/4 c tomatoes slice
  • 1/4 c corn (fresh, canned (drained), or frozen (defrosted))
  • 1/4 c peppers sliced
  • 1/4 c pinto beans or beans of choice
    • GARNISH

      • 2 oz. Avocado Chopped
      • 1/4 Cup Red onions Diced
      • Cilantro Chopped
      • Scallions Chopped
      • 2 TBSP Bolthouse Cilantro avocado dressing

Instructions

  1. Preheat oven to 425 degrees;
  2. Cut the cauliflower to bite size pieces and place onto a parchment lined sheet pan;
  3. Place the cauliflower down and spray with avocado oil;
  4. Season with spices;
  5. Roast for 30-35 minutes or until tender and golden;
  6. Add the toppings of your choice and cheese of choice;
  7. Place back into oven until cheese is melted;
  8. Garnish with your cold garnishes and dressing;
  9. ENJOY!
