Not only does this chicken salad pack a crunch punch, but it doesn’t get soggy in the fridge overnight so you can make a big batch and enjoy leftovers for lunch! It’s also a great way to use up those ingredients in the fridge that you need to use before they go bad, so remember that you can really use whatever veggies you want and even whatever protein you want, BUT, we suggest you try this recipe first and then elaborate from there!

Ranch Chopped Broccoli and Cauliflower Salad

The perfect salad to make for lunch or dinner! Healthy, delicious, and extra crunch!


Ingredients

SALAD INGREDIENTS:

  • 1 head of broccoli chopped
  • 1/2 head of cauliflower, chopped
  • 2 scallions, sliced
  • cherry tomatoes, halved
  • and whatever else is in your crisper drawer that needs to be used up (in this case, a bit of lettuce and some broccoli sprouts).

RANCH SALAD DRESSING:

 


Instructions

  1. Coat 2 boneless skinless breasts with coconut oil and OUR Nothin’ But Ranch;
  2. Pop into the air fryer at 360 degrees for 20 minutes;
  3. While the chicken is cooking throw all the salad ingredients together in a big bowl;
  4. Then make the salad dressing (see below);
  5. Once the chicken is done, dice it up and add to the salad!

RANCH SALAD DRESSING:

  1. Add OUR Nothin’ But Ranch to taste;
  2. Mayo;
  3. Squeeze of lemon!
  4. Add to the chicken and salad and blend well;
  5. ENJOY!
