And don’t forget a good dipping sauce…You can use a homemade honey mustard (equal parts honey mixed with creamy Dijon mustard) or whatever YOUR favorite dipping sauce of choice is!

Everything Bagel Crispy Quinoa Chicken Bites

Ingredients

  • OUR Everything But Tha’ Salt
  • 2 bags of quinoa, cooked according to package instructions
  • 2 pounds boneless, skinless chicken breasts, sliced into 2-inch pieces
  • 2/33/4 c avocado oil or olive oil of choice (start with 2/3 c and add more if needed)
  • 1/2 tsp kosher or sea salt

Instructions

  1. Preheat the oven to 375 degrees. Line a large rimmed sheet pan with parchment paper;
  2. Pour avocado oil in a small bowl;
  3. Empty bags of cooked quinoa into a medium bowl. Mix in everything bagel seasoning & salt;
  4. Dip each piece of chicken in avocado oil, draining off excess back into the bowl. Then dip & coat in quinoa mixture. Place on a parchment-lined sheet pan (pieces can be close together on the pan);
  5. Bake for 20 minutes, then turn chicken pieces over. Bake for an additional 10-15 minutes until golden & crispy;
  6. Feeds 4-6 as an appetizer or serve with roasted veggies or a side salad for dinner!
