Beef, Bean & Cilantro Lime Cauliflower Rice Burritos

Description

The ultimate at home restaurant style burrito!


Ingredients

Units Scale

Taco Meat

  • 1 pound ground beef 96/4
  • 1 T of OUR Taco Knight
  • Salt & Pepper to taste
  • 1/4 cup beef broth of your choice
  • 1/4 cup Fresh cilantro chopped

Add Ons

  • 1/4 c fat-free refried beans (per burrito)
  • fat free cheddar cheese 1/3 c per burrito
  • Shredded lettuce
  • Diced tomatoes
  • Salsa, guacamole, or hot sauce of choice

Rice

  • 1 bag of cauliflower rice (1012 oz) frozen steam in bag
  • 1/4 cup Cilantro chopped fine
  • lemon zest of one lemon
  • lime juice half a lime
  • OUR Taco Knight seasoning to taste
  • Salt & Pepper to taste

Tortilla/Flatbread

  • 4 tortillas or flatbread of choice

 


Instructions

  1. In a saute pan, brown the beef, drain if needed, then place back into the pan;
  2. Add the beef broth, Taco Knight, cilantro, salt and pepper to taste. Set aside;
  3. Microwave the bag of cauliflower rice according to package and strain any access water;
  4. Place cauliflower rice into bowl with, chopped fresh cilantro, lime zest, lime juice, Taco Knight, salt and pepper to taste;
  5. Place flatbread down and time to assemble;
  6. Smear the refried beans, cheese, beef, cauliflower, rice, lettuce, salsa, and then dressing;
  7. Roll up and enjoy;
  8. For an extra outer crunch…spray burrito once rolled and place into air fryer for a few minutes until crisp on the outside!
