This is an easy, “healthy-ish”, clean out the fridge kind of meal, and we are here for it! Not all recipes need to be fancy, complicated, or super healthy. Some of our favorite meals are the ones that we just kind of “wing it” with what we have and see what happens. And it is a really fun and easy way to clean out the fridge and not waste any food. And you can never go wrong with Mexican homemade food, so we hope y’all “wing it” with this recipe too!

Low Carb Chilaquiles

Ingredients

  • Taco Knight
  • La Tortilla Factory low carb tortillas, cut into bite-sized pieces
  • Eggs, scrambled
  • diced green chiles
  • jarred salsa
  • shredded cheddar
  • pepper to taste

Instructions

  1. Start by crisping up the tortillas;
  2. Once they start crisping up add in the rest of the ingredients and cook;
  3. Top with your favorite toppings – guacamole, sour cream, green onions, etc. (whatever you fancy)
  4. ENJOY!
