Buffalo Cauliflower Salad

It’s a meatless flavor bomb salad!



For the cauliflower:

Dairy-Free Ranch Dressing:



  1. Chop 1 head of cauliflower into large florets;
  2. In a bowl, combine 1/2 cup gluten-free panko with 1/4 cup almond flour and 1/4 cup Real Phat Foods Italian flavor crumbs;
  3. Spritz half of the cauliflower with coconut oil and coat it in the dry mixture, add to air-fryer basket, and cook at 400 degrees for 12-15 minutes tossing halfway;
  4. In a separate bowl, mix 1/4 cup butter-flavored coconut oil with 3/4 cup Primal Kitchen Foods jalapeno buffalo sauce;
  5. Remove cauliflower from the air fryer basket and drizzle with 1/2 of the sauce mixture;
  6. Repeat steps 3 through 5 with the second batch of cauliflower.

Dairy-Free Ranch Dressing:

  1. Stir together 1/3 cup mayo with 2 T coconut milk and 1 T of Nothin’ But Ranch;
  2. Add a squeeze of fresh lemon juice, too!
