It’s a meatless flavor bomb salad!
Ingredients
Scale
For the cauliflower:
- 1 head of cauliflower
- Gluten-free panko
- Almond flour
- Real Phat Foods Italian flavor crumbs
- Coconut oil
- Primal Kitchen Foods jalapeno buffalo sauce
Dairy-Free Ranch Dressing:
- Mayo
- Coconut milk
- Lemon juice
- Nothin’ But Ranch
Instructions
Cauliflower:
- Chop 1 head of cauliflower into large florets;
- In a bowl, combine 1/2 cup gluten-free panko with 1/4 cup almond flour and 1/4 cup Real Phat Foods Italian flavor crumbs;
- Spritz half of the cauliflower with coconut oil and coat it in the dry mixture, add to air-fryer basket, and cook at 400 degrees for 12-15 minutes tossing halfway;
- In a separate bowl, mix 1/4 cup butter-flavored coconut oil with 3/4 cup Primal Kitchen Foods jalapeno buffalo sauce;
- Remove cauliflower from the air fryer basket and drizzle with 1/2 of the sauce mixture;
- Repeat steps 3 through 5 with the second batch of cauliflower.
Dairy-Free Ranch Dressing:
- Stir together 1/3 cup mayo with 2 T coconut milk and 1 T of Nothin’ But Ranch;
- Add a squeeze of fresh lemon juice, too!
