Buffalo Chicken Loaded Baked Potato

Loaded baked potato for ONE! Healthy, easy, and delicious and great for lunch or dinner!


  • Leftover shredded buffalo chicken
  • Bolthouse Farms chunky blue cheese yogurt dressing
  • Frank’s RedHot buffalo wings sauce
  • Marketside blue cheese crumbles (or blue cheese crumbles of choice)
  • Laughing Cow spicy pepper jack spreadable cheese wedges
  • plain baked potato
  • Original Red


  • For the baked potato, wash and poke holes in the potato;
  • Spray with cooking spray & season with Original Red, Garlic Powder, and Pepper;
  • Air fry at 400 for 40 minutes or until cooked through;
  • Once the potato is cooked, mix the potato with a wedge of The Laughing Cow & Greek yogurt;
  • Top with shredded buffalo chicken, blue cheese crumbles, and blue cheese dressing!
