Skinny Crockpot Buffalo Chicken Pasta

Description

If you LOVE buffalo chicken recipes, then this is for YOU! It’s easy and a great meal to prep for a busy week ahead…if there are any leftovers!


Ingredients

Units Scale
  • 4 chicken breasts
  • 1 tsp avocado oil spray
  • salt & pepper to tast
  • 1 packet Hidden Valley Ranch mix
  • 1 T Nothin’ But Ranch
  • 1/2 c hot sauce
  • 1/2 c bone broth
  • 1/2 c diced onion
  • 1/2 c diced celery
  • 14.5 oz Tuttoroso canned no salt added diced tomatoes undrained
  • 1/2 c Bolthouse Farms chunky blue cheese yogurt dressing
  • 1/2 c Philadelphia whipped cream cheese
  • 1 C Kraft fat free cheddar cheese
  • 1 c Kraft fat free mozzarella cheese
  • scallions to garnish
  • 1 box Ronzoni penne

Instructions

  1. In a crockpot, place chicken breast down on the bottom;
  2. Spray lightly with avocado oil, season with salt, pepper, and both ranch seasonings;
  3. Pour the hot sauce over the chicken then the chicken broth on the bottom of the crockpot;
  4. Add the celery, onion, and diced tomato;
  5. Pour blue cheese dressing over and set to low for 6-8 hours;
  6. Once chicken is fully cooked and ready to go, shred to your liking;
  7. Cook pasta and then add to the chicken;
  8. Add cheese and fold in, then cover on low for 15 minutes until cheese is melted;
  9. Once cheese is melted, garnish with more hot sauce, and add scallions!
