Description
A delicious and healthy way to add Original Red to a chicken recipe! These chicken cutlets are crispy and juicy and can pair well with any side dishes.

- 2 chicken breasts pounded thin (about 1/2 inch thick)
For the breading:
- 1/4 c Italian bread crumbs
- 1/2 c panko bread crumbs
- 1 T Original Red
- 2 tbsp kosher salt
For the egg wash:
- 2 large eggs
- 1 tsp Original Red
- 1/4 cup milk of choice
Instructions
- Mix together the breading;
- Whisk together the egg wash;
- Heat a cast iron skillet on medium heat;
- Add oil or choice to just cover the bottom of the pan;
- Salt and pepper both sides of the chicken, dredge in the egg mixture then lightly coat in the breadcrumb mixture;
- Pan fry for about 3 minutes per side or until golden brown and 165°F internally;
- Serve with rice pilaf and asparagus or sides of choice!
