Description

Super fudgy, healthy, and easy chocolate zucchini brownies! YUM YUM YUM!

Ingredients

Scale
  • 1 1/2 Cups Zucchini shredded and strained
  • 1/2 Cup Peanut Butter powder
  • 23 TBSP Water
  • 1/2 tsp Vanilla bean paste or extract
  • 2 T pure maple syrup
  • 1/2 C Cane sugar
  • 1/2 C Unsweetened cocoa powder
  • 1/2 C Almond flour
  • 1/2 tsp baking powder
  • 1/2 tsp Baking soda
  • 1 tsp Salt
  • OUR Chocolate Crave

Instructions

  1. Preheat the oven to 350 degrees;
  2. Take the zucchini and shred with a small grater. If you would want a more blended brownie place in a food processor to get super fine;
  3. Place the zucchini in a clean towel and squeeze all of the water out of the zucchini;
  4. Place the zucchini in a bowl;
  5. In a small bowl add the peanut butter powder and slowly add water until it has the consistency of peanut butter;
  6. Add the peanut butter, vanilla, date syrup, sugar, cocoa powder, almond flour, baking soda, baking powder, salt and OUR Chocolate Crave;
  7. Mix until combine;
  8. Pour the batter into a greased pan (I used a 9×9 pan lined with parchment paper);
  9. Bake for 30 minutes;
  10. Let cool on the counter for about 20-30 minutes before cutting!
