The perfect salad to make for lunch or dinner! Healthy, delicious, and extra crunch!
Ingredients
Scale
- 2x boneless skinless chicken breasts
- OUR Nothin’ But Ranch
SALAD INGREDIENTS:
- 1 head of broccoli chopped
- 1/2 head of cauliflower, chopped
- 2 scallions, sliced
- cherry tomatoes, halved
- and whatever else is in your crisper drawer that needs to be used up (in this case, a bit of lettuce and some broccoli sprouts).
RANCH SALAD DRESSING:
- Add OUR Nothin’ But Ranch
- Mayonnaise of choice
- Squeeze of lemon
Instructions
- Coat 2 boneless skinless breasts with coconut oil and OUR Nothin’ But Ranch;
- Pop into the air fryer at 360 degrees for 20 minutes;
- While the chicken is cooking throw all the salad ingredients together in a big bowl;
- Then make the salad dressing (see below);
- Once the chicken is done, dice it up and add to the salad!
RANCH SALAD DRESSING:
- Add OUR Nothin’ But Ranch to taste;
- Mayo;
- Squeeze of lemon!
- Add to the chicken and salad and blend well;
- ENJOY!
