- 2 bags of quinoa, cooked according to package instructions
- 2 pounds boneless, skinless chicken breasts, sliced into 2-inch pieces
- 2/3–3/4 c avocado oil or olive oil of choice (start with 2/3 c and add more if needed)
- 1/2 tsp kosher or sea salt
Instructions
- Preheat the oven to 375 degrees. Line a large rimmed sheet pan with parchment paper;
- Pour avocado oil in a small bowl;
- Empty bags of cooked quinoa into a medium bowl. Mix in everything bagel seasoning & salt;
- Dip each piece of chicken in avocado oil, draining off excess back into the bowl. Then dip & coat in quinoa mixture. Place on a parchment-lined sheet pan (pieces can be close together on the pan);
- Bake for 20 minutes, then turn chicken pieces over. Bake for an additional 10-15 minutes until golden & crispy;
- Feeds 4-6 as an appetizer or serve with roasted veggies or a side salad for dinner!
