Description

Easy, delicious, filling breakfast bowl!


Ingredients

Scale
  • 141 grams Yukon gold potatoes – large cubes (1/2 inch)
  • 1 chicken sausage or sausage of choice
  • 3 Eggs
  • OUR Green Zest
  • Black pepper to taste
  • 20 grams fat free cheddar cheese
  • 20 grams fat free mozzarella cheese
  • Hot sauce – optional
  • Chives to garnish

Instructions

  1. First take the potatoes and chop into large cubes (about 1/2 inch);
  2. Place into the microwave for two minutes or until tender;
  3. In a medium heated skillet, spray some avocado oil then add the potatoes;
  4. Sauté for a few minutes then cut up the chicken sausage and add to the same pan as the potatoes;
  5. In the same pan or a new one, cook your eggs to your liking;
  6. Sprinkle the cheeses onto the potatoes and sausage and allow to melt;
  7. Place your cooked eggs on top of the potatoes and sausage;
  8. Enjoy!
