- 141 grams Yukon gold potatoes – large cubes (1/2 inch)
- 1 chicken sausage or sausage of choice
- 3 Eggs
- OUR Green Zest
- Black pepper to taste
- 20 grams fat free cheddar cheese
- 20 grams fat free mozzarella cheese
- Hot sauce – optional
- Chives to garnish
Instructions
- First take the potatoes and chop into large cubes (about 1/2 inch);
- Place into the microwave for two minutes or until tender;
- In a medium heated skillet, spray some avocado oil then add the potatoes;
- Sauté for a few minutes then cut up the chicken sausage and add to the same pan as the potatoes;
- In the same pan or a new one, cook your eggs to your liking;
- Sprinkle the cheeses onto the potatoes and sausage and allow to melt;
- Place your cooked eggs on top of the potatoes and sausage;
- Enjoy!
