A delicious, healthy, and fun Fall recipe to use delicata squash!
Ingredients

- 3 cups delicata squash
- 6 oz blackened chicken
- 2/3 cup roasted corn
- 1/4 cup caramelized onions
- 2 diced sweet mini red peppers
- 1 tsp OUR Blackened
- 1/2 tbsp fresh chopped cilantro
- 2 tbsp medium salsa con queso
- 2 tbsp light sour cream
- 1/3 oz cotija cheese
Instructions
- Slice the end of your delicata then down the middle long ways. Scoop out the seeds then cut into fry shapes;
- Spray or drizzle EVOO and season with OUR Blackened;
- Air Fry at 400 for 25 minutes;
- Add chicken to the air fryer when you have 10 minutes left. Shake squash first;
- Caramelize your onions in a fry pan then add your corn to heat up once the onions are done;
- Dice up your red peppers and cilantro;
- Once your chicken is cooked, cut into bite size pieces;
- Assemble your bowl with all your goodies, drizzle your cheese on top, add sour cream, cilantro and cotija cheese!
