We LOVE a big salad for lunch or dinner! Salads DO NOT need to be boring. They actually can be really fun, versatile, and easy to make. A favorite of ours is a good caesar salad! This type of salad though can be loaded with extra calories and unhealthy fats, but this recipe is a great way to make it “healthier” without losing the taste. And with that crispy cheesy bread…OMG…so GOOD!

Description
An easy, healthy salad, with some cheesy goodness!
Ingredients
- 4 ounces chicken breast or rotisserie chicken
- Nothin’ But Ranch
- Salt & Pepper to taste
Salad Ingredients:
- 3 cups Romaine lettuce chopped
- 1/2 c cucumbers chopped
- 1/4 c red onions chopped
- 2 T parmesan cheese
- 28 Good Thins sea salt and rice snacks
Dressing:
- 2 T non-fat Greek yogurt
- 2 T Bolthouse Farms Caesar Pramigiano Yogurt dressing
- black pepper to taste
Cheese Bread:
- 2 slices Royo Bread or bread of choice
- spray butter
- 1/4 tsp garlic salt
- 20 grams fat-free mozzarella
Instructions
- Cook the chicken accordingly and make sure it is cooked before assembling;
- Chop up the chicken, romaine, cucumbers, and red onions.
- Place into a large zip bag or Tupperware container;
- Add the parmesan cheese;
- In a small bowl mix up the Caesar dressing, yogurt, and black pepper to taste. Pour into the bag;
- Crush up half of the Good Thins, add to the bag then shake the bag or container until everything is coated evenly;
- Pour into a bowl, top with remained Good Thins (crushed) and top with cheese bread!
Cheese Bread:
- Spray the bread slices with butter, then sprinkle with garlic salt and mozzarella;
- Place into an oven at 350 degrees or an air fryer at 350 degrees and bake until melted.
