Turkey Bacon & Spinach Egg Cups

Description

Easy, healthy, versatile, DELICIOUS meal prep recipe!


Ingredients

Units Scale
  • OUR Original Red
  • Shredded frozen hash browns
  • 1 cup chopped spinach
  • 1 package cooked and chopped turkey bacon
  • 10 whisked eggs
  • Black pepper to taste

 


Instructions

  1. Preheat the oven to 425 degrees;
  2. Place liners inside a cupcake tin;
  3. Put enough frozen shredded hash browns to lightly cover the bottom of each liner (or works great with two tatertots in each);
  4. Season with OUR Original Red;
  5. Fill halfway with chopped spinach;
  6. Add in chopped bacon;
  7. Pour the whisked eggs evenly over the 12 cups;
  8. Top with black pepper;
  9. Bake for 20 minutes;
  10. Serve with hot sauce and ENJOY!
  11. **To reheat – place 2 eggs cups on a plate and microwave for 45 seconds**
