Everyone loves muffins…RIGHT?!?! But most muffins are loaded with calories, fat, and ingredients you can’t pronounce. Not GOOD…but these “Pumpkin Banana Muffins” are easy, healthy, and delicious, so delicious that even the kids will eat them up. And they are great for meal prep, so you can enjoy throughout the week as breakfast or even a snack, and you can even top it with some butter, peanut butter, and jam if you really want to jazz it up!

Pumpkin Banana Muffins

Description

Easy, delicious, and healthy, these muffins are great for meal prep that everyone will LOVE!


Ingredients

WET INGREDIENTS:

  • 34 overripe bananas
  • 1 15 oz. Pumpkin puree not pumpkin pie filling
  • 1/4 c Unsweetened apple sauce
  • 3 Eggs
  • Splash Vanilla extract

DRY INGREDIENTS:

  • 2 c Flour
  • 1/2 c Sugar
  • 2 tsp Cinnamon
  • 2 tsp OUR Pumpkin Spice
  • 1/2 tsp Nutmeg
  • 2 tsp Baking soda
  • 1/4 tsp Baking powder
  • 1/2 tsp Salt

Instructions

  1. In a bowl combine all of the wet ingredients;
  2. Add all of the dry ingredients until fully combine;
  3. Take an ice cream scoop (use a standard muffin scoop size) = 1/4 cup amount;
  4. Scoop 18 muffin portions into well greased muffin pans;
  5. Bake at 350 for 15-18 minutes or until a toothpick comes out clean;
  6. Spray the tops of the muffins while hot with the spray butter;
  7. Sprinkle the sugar mixture evenly over the 18 muffins (only need a little bit);
  8. Let cool for about 10 minutes before removing from the pan!
