Blackened Chicken Street Corn Pasta

Description

A pasta with Mexican flare that is LOADED with flavor! It’s DELISH!


Ingredients

Scale
  • 3/4 cup Al Dente Carba Nada Fusilli Pasta (dry)
  • 2 ear corn on the cob
  • 7 oz Tyson Blackened Chicken
  • 1/8 cup Light Sour Cream
  • 22/3 tbsp Light Mayo
  • 1 Lime
  • 1 tbsp Fresh Chopped Cilantro
  • 1/8 cup Diced Red Onion
  • 1 small Mini Sweet Red Pepper
  • 1/8 cup Chopped Green Onions
  • 1 tsp Chili Powder
  • 1/2 tspOUR Blackened seasoning
  • 1 tbsp Grated Parmesan
  • 1/3 oz Cotija Cheese

Instructions

  1. Air fry chicken at 400 for 10 minutes;
  2. Boil your pasta until done (usually 10ish minutes);
  3. Cut off the corn from your cobs and fry in Pam along with some of your chili powder. Once some kernels turn darker, pull off and set aside;
  4. Cut up all your veggies;
  5. Mix your sour cream, mayo and juice of 1/2 your lime then set aside;
  6. Once chicken is done, cut into bite size pieces;
  7. Pour cooked pasta in to your mixing bowl;
  8. Add chicken, veggies, 1/4 of your parmesan, cotija cheese, corn and dressing mixture and stir all together;
  9. Top with rest of your grated parmesan, more of your seasonings and drizzle of more sour cream if you wish!
